The USDA recommends pressure canning as the only safe method for low-acid foods such as vegetables, meats, and poultry. The sturdy lid locks down during canning or cooking; an inner sealing ring keeps the steam in. The vent pipe is simple to keep clean with a small brush or pipe cleaner, and both the air vent/cover lock and the overpressure plug are removable. I have just received my Presto 23 quart pressure canner. I am delighted. It is exactly what I wanted and it can also double as a water-bath canner for quarts. The super discount enabled me to purchase this canner. The raised bottom is also safe on glass and ceramic smooth-top ranges. I am looking forward to doing a batch of applesauce. The price is good, and it performs. But the gaskets are very easy to blow out.

Greeting, This canner did the job that I needed for it to do, but after the fact for a first time the inside turned a different color. I can't make it make since. I was glad that I was not using it for anything else, If so I would have sent it back
