Customer Review: Excellent Book. Each Chapter was well organized with realistic example. The language the author used in the book was easy to understand. The key notes were very helpful and excercises were agreat for class discussion. I certianly will use this book as my primary source for the final MPA-examination.

Customer Review: I had to get this book for my Meat Cutting class in culinary school. It had so much information! I highly reccomend it if you ever plan on owning a restaurant/buying large quanities of meat. Or if you just love meat. Tells you body parts, etc.
